With decades of experience in prestigious New York City establishments like Sushi of Gari, Nobu, and Tender at the Sanctuary Hotel, Edwin has honed his craft to perfection. His recent endeavors include spearheading the sushi program at TerraSole Ristorante in Ridgefield, CT, and showcasing his exceptional skills at Omakase in New Fairfield.
In collaboration with Scott, the owner of TerraSole, now, Chef/Owner Edwin has now established Omakase Westport located at 45 Saugatuck Avenue in Westport, CT. Here, he introduces his unique sushi and Omakase offerings to the local community, sourcing the finest seafood from Japan and fresh local catches.
With a focus on Omakase, Chef Edwin is thrilled to share the exquisite experience of sushi with Westport and its surrounding areas. His passion for the art of sushi and dedication to excellence promise to delight and inspire all who visit Omakase Westport.
Omakase, Japanese word meaning to “leave to someone else,” which diners at Japanese sushi restaurants use to indicate that they are leaving their meal to the chef’s discretion. The term omakase can also refer to such a meal, which usually consists of a series of small servings or courses of sushi offered at a fixed price.
Omakase signals that diners in a sushi restaurant will allow the chef to produce the chef’s own choice of dishes using fresh ingredients in simple artistic presentations.
During omakase preparation, the chef interacts with the diners to create a pleasurable experience. People who choose an omakase meal should be prepared to try unfamiliar preparations during a long and leisurely meal.
Omakase diners often appreciate not needing to make decisions about what to eat.
We are pleased to present a sixteen-course chef’s tasting menu, meticulously curated each evening. Each course will be introduced with a detailed explanation and an insightful overview of the history of Omakase. Throughout your meal, the Chef will be available to answer any questions and ensure an exceptional dining experience.
Kindly allow approximately one hour and forty-five minutes for your meal. Seating is reserved for two hours to facilitate preparations for our next guests.
The Omakase Experience is offered at $185 per person, exclusive of sales tax and gratuity. Should you wish to enjoy additional selections, an à la carte sushi menu is available upon request, or you may consult the Chef for personalized recommendations.
